The ``golden branch`` - as the wheat is often called in literature is, according to the ancient rural tradition, embodying different figures. Among these are the fox, the rooster, the hare, the goose and the goat. Respect for the territory has always been strong in the people who work on it and take care of it all year round. At one time, for example, the person who had cut the last grains of wheat or the last sheaf would take the name of one of these animals and would sometimes keep it throughout the year, out of respect for what the wheat represented in their culture.
